Expert Tips & Tricks
The biggest challenge with Bellinis is foaming or overflowing. This is primarily because the bubbles in the sparkling wine get trapped in the peach puree, creating excess foam. Here are some tips I've picked up over the years to avoid it:
- Use chilled glassware for the best result. Chilled glassware keeps the drink colder, slowing down the release of carbonation.
- Keep your peach puree chilled before mixing, for the same reason as above.
- Pour slowly! You can either tilt your glass on its side to ensure a slow pour, or even better, pour the sparkling wine over the back of a spoon.
- Stir very gently to combine the peach puree and sparkling wine.

Ingredients
- ยผ cup peach puree (homemade method in notes)
- ยฝ cup non-alcoholic prosecco (sub with ginger ale or sparkling grape juice โ see Note 1)

Instructions
- Add the peach puree to your chilled wine glass.
- Gently pour in to non-alc sparkling or alternative.
- Stir gently, garnish and serve.

To make the peach puree
Use peeled, pitted fresh peaches or drained tinned peaches, then cut into chunks and blend until smooth. You can use a tablespoon or two of water or the peach syrup to facilitate blending if you need to. Youโll need approximately โ โ ยฝ ripe peach per drink, or 2 tinned peach slices, depending on the size of the peach.Nutrition
