Raspberry Mocktail

This raspberry mocktail is made right in the glass so it's super easy and delicious too. A perfect non-alcoholic Christmas Drink.

I love this raspberry mocktail and the combo of sweet berries, fresh mint and sour lime.

This would perfect Christmas mocktail because of the gorgeous red and green colours.ย My virgin cosmopolitan and Christmas pudding mocktail are some the best mocktail recipes for the festive season.

If you have fresh raspberries that are in season, they might be sweet enough, so you might find you donโ€™t need to add any sweetener to this at all. I have made some suggestions below in Note 1 for sugar alternatives to use. The date syrup is always a favourite, but keep in mind it may alter the colour of the drink slightly.

I love this one because you can make it in the glass, so itโ€™s super quick and easy. It's also a great mocktail for kids.

If you are making this for a crowd, you can increase the quantities and serve in a jug instead. Just do all the muddling in the jug, then top with sparkling water and ice. Depending on the jug you are using, you might need to strain it a little to make it easier to pour. This is another reason why mocktail recipes like this are so lovely for the festive season. You can do the muddling in advance to make it easier later.

If you prefer to serve in glasses, you can 'pre muddle' the raspberry, lime and mint, then leave in the fridge. Then all you need to do is top up the glass with sparkling water and ice once your guests arrive.

Raspberry Mocktail

This raspberry mocktail is made right in the glass so it's super easy and delicious too. A perfect non-alcoholic Christmas Drink.

Ingredients

  • 8 raspberries
  • 1 lime quartered
  • 8 mint leaves
  • sweetener of choice see Note 1

Instructions

  • Place raspberries, lime, mint and sweetener (if using) into a glass.
  • Muddle together for about 1 minute to release the juice from the lime and raspberries, and the flavour from the mint. If you donโ€™t have a muddler, the back of a wooden spoon or a soup spoon works well.
  • Top with sparkling water and stir gently.
  • Add ice and garnish.

Note 1: If your raspberries are sweet you may not need a sweetener. If using, you can choose your preferred sweetener, and add it to taste. I used ยฝ teaspoon Stevia, but there are plenty of other sweetener options. Other suggestions are honey, monk fruit sweetener orย date syrup.
