How fun is this easy Grinch mocktail for Christmas?! With a delicious combination of apple, cucumber, lemon and your choice of mixer, these green apple mocktails are glorious to drink AND to look at!
I have had about a million requests (ok,, slight exaggeration!) for a green Grinch mocktail so today I share my creation with you! I put a call out on my Instagram and asked what you'd like to see in a green mocktail base, and the top 2 were green apple and cucumber - so I decided to grant your wish and combine the two flavors.

It's simple to make: you know I love an easy mocktail, and this recipe is no exception. Pop your ingredients in a shaker, strain into a glass and top with you preferred mixer - voila!
How to make it
To make this easy green Grinch mocktail:
Add the lemon juice to your shaker Clap the mint together in your hands a few times, then add it to your shaker.
Add the cucumber and green apple juice to your shaker, along with some ice. Replace the lid and shake well for about 10-15 seconds. Fill your glass with ice and strain the mixture in.
Tope with your preferred mixer, then garnish with your choice of festive garnishes - I personally love cranberries and mint! You can also add a little lime flower like I have in the pictures.
Expert tips and tricks
Use the right cucumber for your juice! I'm not sure if I just got lucky, but my juice turned out a glorious green color, as you can see in the images. I used a Lebanese cucumber and chose one with the brightest, lightest skin. If you don't get as lucky as me and the color of your juice is dull, you might need to add a tiny bit of food coloring, or green apple syrup.
To add the food coloring, take a toothpick and and dip it into your food dye, then swish the toothpick around in your juice. Do this until you reach your desired color - you won't need much! Another option is to add a bit of apple syrup - Monin do one that is a lovely bright green color.

Grinch Mocktail
Ingredients
- 3 oz apple cucumber juice (see note 1)
- 1 oz lemon juice
- ½ teaspoon maple syrup (or your sweetener of choice)
- 6 mint leaves
- Your choice of mixer - I love non-alcoholic sparkling wine, ginger kombucha or ginger beer (see note 2)
- Optional garnishes: cranberries, mint, lime wheel and/or a green apple and sugar rim
Instructions
- Add the lemon juice to your shaker.
- Clap the mint together in your hands to release the scent and oils, then add to the shaker along with the apple cucumber juice.
- Add some ice to the shaker, replace the lid and shaker well for about 10-15 seconds.
- Strain into a glass over ice and top with your choice of mixer. Stir, garnish and enjoy!
