Pot Of Gold Punch (Batch Mocktail)

Bring a little magic to your day with my (surprisingly easy!) pot of gold mocktail. It comes together in minutes and can be prepared in advanced for easy entertaining. With just three ingredients, this shimmering golden punch is the perfect St Patrick's Day mocktail.

Reasons To Love This

  • I mean, we have to address the color first right?! When I set out to create gold mocktails, I never expected them to turn out quite like this! They even received a 'wow' from my husband, who is incredibly difficult to please!
  • Despite appearances, this gold punch is really straightforward to make. A quick pour and stir is all you need - or maybe just a touch longer if you decide to include the chocolate pots of gold too.
  • It's incredibly delicious AND can be made in advance, win win.

Ingredient Notes

  • The base: I used non-alcoholic sparkling wine as my base. I would recommend choosing a slightly dry wine, because the apple adds sweetness. You can sub this with sparkling grape or apple juice if you wish.
  • Apple juice: choose a variety that is golden and clear if possible. Light yellow or cloudy juice will effect the final result.
  • Gold edible glitter: ever tried a glitter mocktail?! Now is the time! You'll find the base and apple juice is already a gorgeous golden hue, but to step it up a notch, edible glitter really does the trick. I've included my favorites in the notes section below.

The Pot Of Gold Instructions

This step is completely optional but SO much fun and easier than you might think! I've included a video in the recipe card below, so if you prefer video instructions to step-by-step image instructions, head there instead! I used Ferrero Rocher to create mine.

  1. Unwrap your chocolate carefully without tearing the foil - you'll need it again soon!
  2. Using a knife, gently run it around the outside of the chocolate, applying just enough pressure to cut through the top layer, but not so much that the chocolate crumbles in your hands. It doesn't need to be perfect.

  1. Gently twist and pull the chocolate in half, so you're left a hollow shell. I got lucky with this one and it came apart perfectly, but if it doesn't, just use a small spoon to scoop out the hazelnut and filling. Again - it doesn't need to be perfect!
  2. Grab your gold foil and wrap the hollow shell again, pressing the foil into the hole to create a little 'pot'.

  1. Take some gold sprinkles, gold edible glitter, or any other gold candy you'd like to use as your 'treasure', and place it inside the pot.
  2. Gently place the finished 'pot of gold' on top of your drink so that it floats. Tip: if you're serving these to guests, make these in advance and place them on your drinks just before serving.

Tips & Tricks

  • I found Ferrero Rocher the easiest chocolate to use for my pot of gold, but you can use any chocolates you wish, or great creative and make your own!
  • Chill all ingredients prior to assembling.
  • If you're making these in advance, chill your gold punch in the fridge and don't add the 'pots of gold' until you're ready to serve.

For the punch

  • 1 bottle sparkling non-alcoholic wine (sub with sparkling grape or apple juice, especially if making for kids)
  • ¾ cup apple juice (ideally a golden, clear variety. Can sub with pineapple juice, be mindful this will impact final color)
  • 1 teaspoon gold edible glitter (optional, but definitely adds sparkle!)

For the 'pot of gold' (optional)
