Cucumber Spritz Mocktail

With a perfect balance of crisp, fresh and sweet, this easy cucumber mocktail with lime and elderflower can be made in less than 5 minutes. Itโ€™s one of my favorite mocktails for Spring and can be easily adapted to make as a batch mocktail for guests.

Ideal for a crowd: because this drink is assembled directly in your glass with no shaker required, itโ€™s ideal for a crowd. It's as simple as pour, stir and serve.

Tip: if you are making your own cucumber juice (easy method below), have this prepped and ready to go prior to serving your guests to save time.

The perfect Spring mocktail: itโ€™s no secret the floral notes of elderflower and the crisp juicy vibes of cucumber really lend themselves to a Spring mocktail vibe. Garnish this recipe with a few edible flowers and youโ€™ll have a drink thatโ€™s pleasing to both your tastebuds and your eyes!

Ingredients youโ€™ll need

Cucumber juice: you have several options here. Many juice bars and grocery stores will have ready-made cucumber juice, although in my opinion in can be costly! If you have a juicer, the second option is to juice your own. A juicer is a great option if you plan to make a lot of mocktail recipes. If you donโ€™t have a juicer (I donโ€™t!), simply blend 2 inches of cucumber with 2 tablespoons water using a small or handheld blender and strain.

Non-alcoholic elderflower cordial or elderflower syrup: I mention โ€˜non-alcoholicโ€™ elderflower cordial because there is often confusion when I post about cordial on my socials. In some parts of the world, cordial contains alcohol.

Both elderflower syrup and cordial works with this recipe. Pst: if you love elderflower, try my Hugo Spritz mocktail too.

Lime juice: I always use fresh lime juice for mocktails where possible, but I also acknowledge how insanely expensive limes can be, so feel free to use bottled if you need to.

Non-alcoholic sparkling wine or soda water: Iโ€™ll leave it up to you whether you use an alcohol-free champagne alternative or regular soda water. I personally prefer the wine because it gives it more of an adult feel and feels a little more celebratory. But soda water tastes great too!

Optional garnishes: I believe all delicious drinks deserve a pretty garnish, but this step is completely optional. I love using cucumber ribbons...because no cucumber mocktail is complete with a cucumber ribbon right?! You can find the cucumber ribbon tutorial here. and here is a tutorial if you need one.

Expert tips and tricks

  • Make sure all ingredients are icy cold prior to serving. This recipe is designed to be refreshing and crisp and it just does not taste as good lukewarm! Be sure to fill your glass to the brim with ice before assembling.
  • Choose a low sugar alcohol-free wine to keep the sugar content down. There is plenty of sweetness in the elderflower cordial/syrup and you can always add a little more if you need to.
  • Give it a good stir before sipping! Cordial and syrup is heavier than the other ingredients so it tends to sink to the bottom. Be sure to give your mocktail a good stir prior to servingโ€ฆjust donโ€™t disturb those lovely bubble too much!

Frequently asked questions

Can I make my cucumber mocktail as a batch mocktail?

Yes! Just increase the amount of serves you want to make in the recipe card below. This will automatically adjust the quantities and tell you how much of each you need.
Then, instead of assembling in the glass, assemble in a pitcher over a cup or two of ice. Your guests can then serve themselves.

What is the best non-alcoholic wine for this recipe?

Any brand that is dry or lower in sugar! I particularly like Noughty, Giesen or Oddbird.

Ingredients

  • 2 oz cucumber juice (see note 1)
  • ยฝ oz elderflower syrup or cordial (see note 2)
  • 1 oz lime juice
  • ยฝ cup dry sparkling wine or soda water (see note 3)
  • Cucumber ribbon and/or edible flowers to garnish (see note 4)

Instructions

  • Fill your wine glass to the brim with ice then add the elderflower syrup or cordial.
  • Add the cucumber juice and lime juice.
  • Gently pour in the non-alcoholic wine (or soda) and stir, being careful not too disturb the lovely bubbles too much!
  • Add your optional garnish and serve.

Notes

Note 1: cucumber juice can be bought from the store or homemade using a juicer. If you don't have a juicer (I don't!) simply blend 2 inches of cucumber with 2 tablespoons of water and strain. I find it easiest to use a small blender or handheld/immersion blender. Push down on the cucumber flesh with your fingers or the back of spoon to extract every nutritious drop.
Note 2:ย you can use either non-alcoholic elderflower cordial or an elderflower syrup, both work equally well.
Note 3:ย I prefer to use a dry non-alcoholic wine for my cucumber mocktail because I find it is a little more adult and celebratory. Soda water also tastes delicious, it's just a little milder in flavor.
Note 4: you can use a mix of cucumber ribbons, lime wheels and or edible flowers as a optional garnish.
