Tropical Mocktail

Is it even Summer if you're not sipping on mango, pineapple and coconut? This tropical mocktail is ready in under 5 minutes and was described by one of my recipe testers as 'sunshine in a glass'. With it's stunning layers, and the option to make this as a single serve or as a batch mocktail for a party, I guarantee EVERYONE will be asking for this recipe.

Ingredients - What You Need

With 4 simple ingredients you'll be sipping on tropical paradise in no time!

  • Fresh mango, mango juice or mango nectar: you have the option of making a mango puree from fresh or thawed mango (SO easy to do - method below), or using mango juice. If you have leftover mango, try my mango mojito mocktail too.
  • Pineapple juice: choose one without added sugar, the mango and coconut water makes this sweet enough.
  • Coconut water: brimming with naturally occurring electrolytes, coconut water makes a wonderful mixer...the rave reviews on my coconut water mocktail will vouch for that! Prefer a sparkling mocktail? Use sparkling coconut water or you could try a coconut or ginger kombucha.
  • Something to layer: I prefer using chilled hibiscus tea for this mocktail because I think it brings the tropical vibe! You can substitute this with pomegranate or cranberry juice if you wish.

To make your tropical mocktails

  1. Fill a tall glass to the brim with ice. I repeat...to the BRIM. Add your mango puree (or juice, or nectar).
  2. Add the pineapple juice.

3. Top with the coconut water.
4. Stir gently to combine.

5. Gently pour in the hibiscus tea (or your pomegranate or cranberry juice).
6. Garnish with your choice of pineapple fronds, orange and/or edible flowers (optional).

The secret to layered mocktails

I've been there - you see a gorgeous layered mocktail and just KNOW you have to try it. But when you try to recreate it at home, the result is just...blah. The colors mix together, there are no defined layers and while it might taste great - it doesn't look great.
Here are some tips to getting it right every time:

  • For a mocktail recipe with ice like this one, the key to holding the layers in place is the ice. When I say fill it to the brim, I mean fill it to the BRIM.
  • While on the topic of ice, I recommend small ice cubes (like pebble ice) if you have them. If you don't, pop some larger ice cubes in a zip lock bag and (carefully) give them a therapeutic whack with a mallet or hammer and break them into smaller pieces - be careful!
  • For most other mocktails, you'll find the secret to perfectly layered mocktails is in the density of your ingredients. To put it simply - heavier liquid sink, lighter liquid will float. Always pour the heaviest liquid (syrups, nectars etc) first, followed by the lightest (teas, coconut water) next.

Last tips - chill your ingredients prior to serving and do not stir!

Ingredients

  • 2 oz mango juice or puree
  • 3 oz pineapple juice
  • 3 oz coconut water
  • 1 oz hibiscus tea (can sub for pomegranate or cranberry juice)
  • Pineapple fronds, citrus and/or edible flowers to garnish

  • Fill your glass with ice. Add the mango juice/puree, pineapple juice and coconut water. Slowly add the hibiscus tea (or alternative). Garnish with your choice of pineapple fronds, citrus or edible flowers.

    My wife made this for the kids and I - can confirm it is delicious and really easy too. Kids loved creating the layers.
