Lychee Mocktail With Rose

Sweet lychee, floral rose and tangy lime combine to create this easy, pink lychee mocktail that is perfect for a girls night in, baby shower or bridal shower. With your choice of mixer, you can decide whether to add a coconut or ginger twist!

There are so many reasons to love this recipe, including:

  • It's simple to make: several ingredients and a quick shake is all you need to bring your lychee mocktail to life.

Ingredients for a perfect lychee mocktail

Fresh or tinned lychees: Either is fine, but this recipe also calls for the lychee juice from the tin, so I would advise saving some money and choosing the tinned lychees.

Optional - maple syrup or your choice of sweetener: many will find the lychee juice sweet enough, but if you're a sweet tooth, you can a dd a little maple syrup or your sweetener of choice.

Lychee juice from the tin

Rose syrup: I made a low-sugar rose syrup to use in this recipe, which I'll pop in the recipe card below. If you want a quick and easy option, opt for a ready-made rose syrup. Don't forget to check out my rose lemonade too.

Lime juice: fresh is always best when it comes to citrus, but you can use bottled if you wish.

Your choice of mixer: I like to call this a 'choose your own adventure' mocktail'! You have a choice of ginger kombucha, sparkling coconut water or regular coconut water (for those of you who prefer non-carbonated mocktails). You can use the leftovers to make my easy coconut water mocktails.

How to make it

To make your lychee rose mocktail:

  1. Add the lychees to your shaker with your optional sweetener.
  2. Muddle the lychees for a minute or so until the juices are released.

3. Add the rose syrup to your shaker.
4. Add the lime juice, add 3-4 cubes of ice, replace the lid then shake for 10-15 seconds until ingredients are combined.

5. Fill your glass with ice (and edible rose buds if you wish!), then strain the mixture in.
6. Top with your choice of mixture, stir gently, then garnish with your choice of edibles roses and/or lychees. You can even add a slice of lime if you wish!

Lychee Mocktail With Rose

This gorgeous pink lychee mocktail is simple to make and delicious to sip. With a combination of sweet lychee, floral rose and tangy lime, it's a perfect mocktail for baby showers, bridal showers or a girls night in.

Ingredients

  • 2 tinned lychees
  • 1 teaspoon maple syrup or your choice of sweetener (optional - see Note 1)
  • 3 oz lychee juice (from the tin)
  • ยพ oz rose syrup (see Note 2)
  • ยฝ oz lime juice (fresh preferred, but you can use bottled)
  • ยฝ cup ginger kombucha or sparkling/still coconut water (see Note 3)

Instructions

  • Add the lychees and the optional sweetener to a shaker. If you don't have a shaker, use a mason jar or similar. Muddle the lychees until the juices are released. If you don't have a muddler, use the handle end of a wooden spoon.
  • Add the lychee juice, rose syrup and lime juice to the shaker with 304 cubes of ice.. Replace and lid and shake for 10-15 seconds until the ingredients are combined.
  • Fill your glass with ice and add some edible rose buds if you wish. Strain the mixture in and top with your choice of mixer.
  • Stir gently and garnish with optional lychees and edible rose buds.

Notes

Note 1: lychee juice is naturally very sweet so you might not need any sweetener in this, but if you're a sweet tooth - go for it! If you're unsure, make the mocktail without, taste, then add at the end if you need it to.
Note 2: I made a low sugar rose syrup, but you're welcome to use ready-made rose syrup if you wish. If you want to make a regular rose simple syrup, replace the monkfruit sweetener with sugar.
To make the rose syrup, you need
  • ยฝ cup powdered monkfruit sweetener
  • ยฝ cup water
  • ยฝ cup edible food grade rose petals
Add the monkfruit sweetener and water to a saucepan over low heat. Stir until the monkfruit sweetener has dissolved. Add the rose petals and stir until they are wet. Leave the mixture on low with the lid on for 12-15 minutes. Strain and cool.
Note 3: I love the ginger kombucha for a functional twist, but coconut water is perfect too! Opt for a still coconut water if you prefer a non-carbonated mocktail.
