Lemon Blueberry Smash

With juicy blueberries, tart lemon and the goodness of kombucha, this mocktail is perfect for when you're looking for something nourshing, hydrating and oh so delicious.

Tip: I love using frozen blueberries for mocktails...just thaw them first! They tend to be juicier and have a more vibrant color too.

Ingredients
- 8-10 blueberries, fresh or thawed (tip: I LOVE using thawed blueberries in this, they tend to be more vibrant in color)
- 1 oz lemon juice
- ½ cup lemon mineral water or citrus flavored kombucha (lemon, lime or ginger kombucha is all delicious)
- 1 teaspoon honey
- 1.5 oz butterfly pea tea

Instructions
- Brew the butterfly pea tea according to packet instructions, then measure out 1.5 oz (45 ml) while it’s still warm. Stir through the honey until it dissolves and set aside to cool.
- Add the blueberries to a glass and muddle until the blueberries burst and the juice is released. Add the lemon juice and fill your glass with ice.
- Pour in your mixer of choice then slowly pour the butterfly pea tea on top. Garnish and serve.
