Raspberry Rose Mocktail
This simple mocktail has the perfect balance of juicy raspberries, floral rose and sweet honey, and can even be made in the glass to save on washing up.

- 8 raspberries (fresh or thawed)
- Squeeze of lemon
- 1 teaspoon honey (see Note 1 for low sugar option)
- ¼ teaspoon rosewater (can sub with rose syrup if you wish)
- 1 cup citrus kombucha or your choice of mixer (plenty of options in Note 2 below)
- Optional garnishes: lemon wheels and/or edible roses
Place the raspberries, lemon juice and honey in a short tumbler. Muddle the raspberries until the juices are released and they are in small pieces.
Add ice and rosewater, then top with your choice of mixer. Stir gently and garnish if you wish.
Note 1: replace the honey with maple syrup, stevia or monkfruit drops if you wish.
Note 2: they sky is the limit when it comes to mixer options for the recipe. My personal favorite is a citrus kombucha, but you might also try a citrus flavored sparkling water, coconut water, light ginger ale etc.
