Pretty Purple Mocktail

This gorgeous purple mocktail brings together juicy blueberries, tangy lemon juice, hydrating coconut water and butterfly pea tea for the prettiest drink that tastes just as good as it looks!

Ingredients

  • 15 blueberries (fresh or thawed - thawed are often more vibrant in color!)
  • ½ oz maple syrup or sweetener of your choice
  • Squeeze of lemon juice
  • ½ cup coconut water (sub with flavored kombucha for a probiotic hit)
  • 1 oz chilled butterfly pea tea
  • Optional: A splash of pineapple juice for extra sweetness
  • Optional garnishes: dehydrated lemon, blueberries, edible flowers

Instructions

  • Muddle the blueberries, maple syrup and lemon juice in a tall glass until the blueberries burst.
  • Fill your glass with ice, then top with coconut water and optional pineapple juice.
  • Slowly pour in the chilled butterfly pea tea.
  • Stir to combine and garnish with your choice of lemon, blueberries, or edible flowers.
