Ingredients

  • 4-5 basil leaves
  • .5 oz lime juice (fresh is best)
  • 2 oz cucumber juice (easy method below)
  • 2 oz dry non-alcoholic white wine (sub with white grape juice, see Note 1)
  • .5 oz elderflower cordial or syrup (or more to taste, see Note 2 for lower sugar options)
  • Extra basil and edible flowers to garnish (optional)

Instructions

  • Place lime juice and basil into your shaker and muddle the basil a few times until it is lightly bruised (see expert tips above for the best way to muddle basil).
  • Add the cucumber juice, non-alcoholic white wine and elderflower cordial or syrup to the shaker with a few cubs of ice. Replace the lid and shake for about 15 seconds.
  • Strain into your martini or coupe glass and garnish with extra basil and/or edible flowers.

Notes

Note 1: I love Giesen 0% Sauvignon Blanc as it's both delicious and lower sugar.
Note 2: I love the Belvoir elderflower cordial, or there are some lower sugar versions such as SweetLeaf.
To make cucumber juice without a juicer
To make enough juice for one mocktail: grate about 3 inches of cucumber into a small bowl, then pour the mixture though a sieve or strainer into a small bowl. I find it easiest to press down on the grated cucumber with the back of a large spoon - this helps to extract every last drop!
If you're making more than 1 mocktail: go by the rule of 1 medium cucumber = around 4oz juice. Instead of hand grating, chop the cucumbers roughly into chunks and place in a blender. Blend until smooth, adding 1-3 tablespoons of water to facilitate blending if you need to. Then strain as described above.
Nutrition panel calculations are based on Giesen 0% and Belvoir Cordial.
