Ingredients

  • 1 small lime (see note 1)
  • 8-10 mint leaves
  • 1 oz elderflower cordial or syrup (see note 2)
  • 1 cup soda water or plain kombucha
  • 1 oz non alcoholic rum or splash of apple cider vinegar (see note 3)
  • Mint, edible flowers and/or lime to garnish (optional)

Instructions

  • Chop the lime into small pieces and muddle in your glass until the juice is released. If you don't have a muddle, use the handle end of a wooden spoon or similar.
  • Clap the mint together in your hands a few times. This releases the oils and allows them to infuse into the drink once assembled. Add the mint to your glass and very gently press down with the muddler a couple of times.
  • Fill your glass with ice and add the elderflower syrup or cordial.
  • Add the non-alcoholic rum or apple cider vinegar (if using).
  • Top with soda water or kombucha, stir gently, garnish and serve.

Notes

Note 1 (lime): I used one small lime, but just use half if your lime is larger. I also recognise how expensive limes can be, so you can substitute this with ½ - 1 oz lime juice if you wish.
Note 2 (elderflower): I have tested this mocktail recipe with both elderflower cordial and syrup and both are delicious!
Note 3 (rum/ACV): Mojitos are traditional made with rum, so I have suggested a non-alcoholic rum. You can leave this out and it will still be delicious! Another thing I like to do is add a splash of apple cider vinegar. Vinegar is a by-product of alcohol and can add that 'bite' that often goes missing in a non-alcoholic cocktail.
