Dragonfruit Mojito Mocktail

A deliciously simple dragonfruit mojito mocktail with lime, mint and pink dragonfruit. This non-alcoholic sip can be made for one or as a batch mocktail for guests, making entertaining a breeze.

Ingredients

  • cup pink dragonfruit (fresh or thawed)
  • 1 small lime, chopped (or half a large lime - see Note 1 for subs)
  • 1-2 teaspoons sugar or monkfruit powder (or alternative - see Note 2)
  • 10 mint leaves
  • 1 oz non-alcoholic rum (optional - tastes great without!)
  • Soda water to top (sub with kombucha for probiotic hit)
  • Extra dragonfruit, lime or mint to garnish

Instructions

  • Place dragonfruit, lime and sugar into a tall glass and muddle until the juices have released from the lime and dragonfruit. 10-15 decent presses should do it! If you don't have a muddle, use the handle of a wooden spoon or similar.
  • Clap the mint together in your hands. This helps to release the oils, resulting in a mintier flavor. Add it to your glass and press down gently with the muddler 3-4 times. Don't over muddle mint - this can make it bitter.
  • Fill your glass with ice, then add the optional non-alcoholic rum and top with soda water.
  • Stir gently to combine, then garnish with extra dragonfruit, mint and lime if you wish.

Notes

Note 1: I always recommend fresh lime where possible, but I know it can be crazy expensive! You can replace with 1 tablespoon lime juice if you wish.
Note 2: powdered or liquid monkfruit sweetener is a great, no-sugar replacement for sugar. You can also use ½-1 ounce simple syrup here if you wish.
