Strawberry Rhubarb Mocktail

A delicious strawberry rhubarb mocktail that tastes like spring! The syrup can be made in advance and the mocktail comes together in minutes once prepared.

Ingredients

For the Syrup

  • ½ cup rhubarb
  • ½ cup strawberries
  • ½ cup monkfruit sweetener or sugar
  • ½ cup water

For the Drink

  • 1-2 oz strawberry rhubarb syrup (method below)
  • 1 oz lemon juice
  • Top with non-alcoholic Prosecco, ginger kombucha, or ginger beer. (Feel free to get creative here, this would also taste delicious with a lemon or lime sparkling water for a low sugar option.)

Garnish

  • Edible flowers
  • Strawberries
  • Fresh or dehydrated lemon

Instructions

The Syrup

  • Add all ingredients to a small saucepan.
  • Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 10-12 minutes until the fruit softens.
  • Lightly mash, then strain through a fine mesh sieve. Cool before using.

The Mocktail

  • Fill your spritz glass with ice.
  • Add syrup, lemon juice and your choice of bubbles. Stir gently and taste.
  • Add a little more syrup if you like.
  • Garnish with fresh strawberries, lemon and/or edible flowers.
