A delicious strawberry rhubarb mocktail that tastes like spring! The syrup can be made in advance and the mocktail comes together in minutes once prepared.
Top with non-alcoholic Prosecco, ginger kombucha, or ginger beer.(Feel free to get creative here, this would also taste delicious with a lemon or lime sparkling water for a low sugar option.)

Instructions
The Syrup
Add all ingredients to a small saucepan.
Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for 10-12 minutes until the fruit softens.
Lightly mash, then strain through a fine mesh sieve. Cool before using.
The Mocktail
Fill your spritz glass with ice.
Add syrup, lemon juice and your choice of bubbles. Stir gently and taste.
Add a little more syrup if you like.
Garnish with fresh strawberries, lemon and/or edible flowers.
