The perfect 5-minute batch mocktail for Spring! With the perfect balance of citrus and floral, this simple mocktail can be made in advance, making Spring entertaining a breeze.
1bottle non-alcoholic Sauvignon Blanc(replace with Pinot Grigio or Riesling. Use a sparkling grape or apple juice if you prefer)
¼ - ½cupelderflower cordial or syrup(for a lower sugar option, replace with a floral tea such as chamomile, rose or hibiscus)
1cuppineapple juice(replace with orange or grapefruit juice)
2sliced citrus fruits of your choice(lime, lemon, orange or grapefruit)
½cupsliced strawberries or raspberries(use any berries that are in season)
Optional Garnish
Edible flowers(use untreated, edible, food-grade flowers that haven’t been sprayed with any nasties! I usually purchase mine from a local grocer or grow them myself.)
Instructions
Add the citrus to a pitcher and muddle gently to release the juices.
Fill the pitcher with ice and add the elderflower, pineapple juice and wine. Stir gently then taste. Adjust by adding more elderflower, juice or some sweetener of your choice if you need to.
Add the strawberries and edible flowers (if using).
Serve over ice in wine glasses with some extra fruit and edible flowers. If you love bubbles, top with a little sparkling water.
