Peach Mocktail

This simple peach mocktail with basil, lemon and honey can be made in minutes and tastes divine.

Ingredients

  • 2 oz peach puree (see note 1)
  • 1 oz lemon juice
  • 6-8 basil leaves
  • ½ teaspoon honey
  • 3 oz kombucha or soda water (see note 2)

Instructions

  • Place peach puree and lemon juice in your shaker. Add the basil and muddle very gently.
  • Place the honey in a small dish with half a teaspoon of water and microwave very briefly (5 seconds max!), then mix with a spoon to create a quick honey syrup.
  • Add the syrup to the shaker with some ice, replace and lid and shake well.
  • Strain over ice and top with your choice of kombucha of soda water.
  • Garnish with your choice of edible flowers, basil or sliced peach.

Notes

Note 1: For the peach puree, you can either purchase peach puree or it’s SUPER easy to make your own. Simply blend 5 tinned (canned) peach slices with 1-2 tablespoons of liquid from the tin. If you prefer to use fresh peach, use half a chopped peach and 1-2 tablespoons of water. It’s your choice whether you leave the skin on or not. I prefer to leave mine on for the extra fibre.
Note 2: If you're not a fan of kombucha, I would recommend a lemon sparkling water, regular soda water or a ginger ale or beer. Any of these alternatives would work.
