Peach Mocktail
This simple peach mocktail with basil, lemon and honey can be made in minutes and tastes divine.

- 2 oz peach puree (see note 1)
- 1 oz lemon juice
- 6-8 basil leaves
- ½ teaspoon honey
- 3 oz kombucha or soda water (see note 2)
Place peach puree and lemon juice in your shaker. Add the basil and muddle very gently.
Place the honey in a small dish with half a teaspoon of water and microwave very briefly (5 seconds max!), then mix with a spoon to create a quick honey syrup.
Add the syrup to the shaker with some ice, replace and lid and shake well.
Strain over ice and top with your choice of kombucha of soda water.
Garnish with your choice of edible flowers, basil or sliced peach.
Note 1: For the peach puree, you can either purchase peach puree or it’s SUPER easy to make your own. Simply blend 5 tinned (canned) peach slices with 1-2 tablespoons of liquid from the tin. If you prefer to use fresh peach, use half a chopped peach and 1-2 tablespoons of water. It’s your choice whether you leave the skin on or not. I prefer to leave mine on for the extra fibre.
Note 2: If you're not a fan of kombucha, I would recommend a lemon sparkling water, regular soda water or a ginger ale or beer. Any of these alternatives would work.
