Matcha Mocktail
This nourishing green mocktail with grassy matcha, sweet pineapple, tart lemon and tropical coconut is simple to make and perfectly delicious. Packed with antioxidants and other benefits, it's ideal to sip when you need a little pick me up!

To prepare the matcha
- 1 teaspoon matcha powder (see notes above for matcha tips)
- 1 tablespoon boiling water
- ½ teaspoon honey (see Note 1)
To make the mocktail
- 7 mint leaves
- 3 oz pineapple juice
- 1 oz coconut water (can replace with pineapple juice)
- 1 oz lemon juice
- 2 oz soda water (optional - see Note 2)
To make the mocktail
Add the matcha mixture to your shaker. Clap the mint together in your hands a few times and add to the mixture.
Add the pineapple juice, coconut water, lemon juice and a few cubes of ice, replace the lid and shake well to combine.
Strain over ice. You can leave as is or add a little soda water and stir if you prefer bubbles. Garnish and serve.
Note 1: I love using honey in this recipe, but you can replace it with a sweetener of your choice, such as maple syrup, regular sugar, monkfruit, Stevia etc.
Note 2: Love bubbles? You can add a little soda water to this! Lemon sparking water works perfectly too.
