- 10-15 blueberries
- 8 mint leaves
- ½ lime (or lime juice - see note 1)
- 1 teaspoon powdered monkfruit sweetener or sugar (see note 2)
- 1 cup soda water, lime sparkling water or kombucha
- 1 oz non-alcoholic rum (optional - see note 3)
Add the blueberries to your glass and muddle until the blueberries burst and the juices are released.
Add the lime and your choice of sweetener and muddle again.
Smack the mint in your hands to release the oils and scent and add it to your glass.
Fill your glass with ice and add your optional non-alcoholic rum or apple cider vinegar, then top with your choice of mixer. Stir gently and garnish.
Note1: Fresh lime in best for this mocktail, but I know they can be expensive! Replace the ½ lime with ½ oz bottled lime juice if you need to.
Note 2: I love using monkfruit for a low-sugar mocktail, but you can replace this with regular sugar, ½ oz honey or maple syrup if you wish.
Note 3: if you like to play around with non-alcoholic spirits, a rum would work perfectly in this. You can even use a teaspoon of apple cider vinegar to give the drink a bit of bite.
