Ingredients

  • 10-15 blueberries*
  • 8 mint leaves
  • Juice of one lime
  • 1 cup sparkling water or kombucha
  • 1 teaspoon honey or sweetener of choice optional

Instructions

  • In a mortar and pestle, muddle blueberries and mint leaves to release the flavour. If you don’t have a mortar and pestle, this can be done in the glass you are making your mocktail in. Use the back of a wooden spoon or similar.
  • Add the juice of one lime to the mixture and stir. If you are using a sweetener, add it now.
  • Spoon mixture into an ice-filled glass. If you have muddled the mixture within the glass, simply add ice.
  • Top with your favourite sparkling water or kombucha. Stir gently and serve.

Notes

  • You can add as many blueberries as you like to this recipe. 10 blueberries will give a lovely subtle flavour, so add more if you like your blueberry flavour more intense.
