Mango Mojito Mocktail

An easy mango mocktail with lime and mint, the perfect mojito for summer.

Ingredients

  • .5 cup Mango fresh or frozen. See Note 1
  • 2 tablespoon Water See Note 2
  • 1 Lime quartered
  • 6 Mint leaves
  • 1 cup Soda water or alternative. See Note 3
  • Extra mint and lime for garnish

Instructions

  • Muddle lime pieces in your glass or pitcher to release the juices. If you don't have a muddler, use the handle end of a wooden spoon, or similar.
  • Clap mint together in your hands until the scent is released. Add to the lime. Give it a gentle press with the muddler.
  • Blend mango and water in a small blender to create a mango puree.
  • Add the mango puree to the lime and mint mixture and stir gently.
  • Fill the glass with ice. Top with sparkling water (or alternative) and stir gently.
  • Garnish with mint and a lime wheel.

Notes

Note 1: fresh or frozen mango can be used for the recipe. If using frozen, thaw before use.
Note 2: add just enough water to turn the mango into a puree. 2 tablespoons was perfect for me, but it will depend on how juicy your mango is! You may need to add a little more or less.
Note 3: the soda water can be replaced with your choice of sparkling drink. Kombucha tastes great in this, and adds to the health benefits.
