Grapefruit Rosemary Mocktail

A sparkling grapefruit mocktail with rosemary syrup. Perfect non alcoholic drink for special occasions and works in both summer and winter.

Ingredients

  • 1 cup fresh rosemary
  • 1 cup water
  • 1 cup sweetener see Note 2
  • 120 ml freshly squeezed grapefruit juice or to taste
  • 1 pinch sea salt optional
  • 2 cups sparkling water

Instructions

  • Add rosemary, water, and sweetener to a small saucepan.
  • Stir to dissolve sweetener.
  • Leave on a very light boil (barely bubbling) for 5 minutes.
  • Remove from heat, cover, and let steep for 30 mins.
  • Set aside to cool.
  • Add ¼ cup freshly squeezed grapefruit juice and ⅛ cup rosemary syrup to an ice-filled glass.
  • Top with sparkling water and finish with a pinch of salt.
  • Garnish and serve.

Notes

  • Note 1: You will have enough rosemary syrup for 4 drinks, this will keep in the fridge for 2 weeks.
  • Note 2: I used monk fruit sweetener for this recipe, but you could also use Stevia, regular sugar, or whatever you preferred sweetener is. If you use Stevia, adjust the amount to ¼ cup – it is extremely sweet!
