Grapefruit Rosemary Mocktail
A sparkling grapefruit mocktail with rosemary syrup. Perfect non alcoholic drink for special occasions and works in both summer and winter.

- 1 cup fresh rosemary
- 1 cup water
- 1 cup sweetener see Note 2
- 120 ml freshly squeezed grapefruit juice or to taste
- 1 pinch sea salt optional
- 2 cups sparkling water
Add rosemary, water, and sweetener to a small saucepan.
Stir to dissolve sweetener.
Leave on a very light boil (barely bubbling) for 5 minutes.
Remove from heat, cover, and let steep for 30 mins.
Set aside to cool.
Add ¼ cup freshly squeezed grapefruit juice and ⅛ cup rosemary syrup to an ice-filled glass.
Top with sparkling water and finish with a pinch of salt.
Garnish and serve.
- Note 1: You will have enough rosemary syrup for 4 drinks, this will keep in the fridge for 2 weeks.
- Note 2: I used monk fruit sweetener for this recipe, but you could also use Stevia, regular sugar, or whatever you preferred sweetener is. If you use Stevia, adjust the amount to ¼ cup – it is extremely sweet!
