Pomegranate Mocktails

Easy pomegranate mocktails with mint and lime that can be made for 1 or a crowd.

Ingredients

  • ¼ cup pomegranate juice
  • Half lime (cut in wedges)
  • 6-8 mint leaves
  • 1 cup soda water or ginger ale (see notes)
  • Non-alcoholic rum to taste (optional - I enjoy this without!)
  • Sweetener to taste (see notes)

Instructions

  • Place lime wedges, sweetener (if using) and pomegranate juice in a tall glass. Muddle gently until all the juice has been pressed out of the lime.
  • Clap mint leaves together in your hands to release the scent and add to the glass. Give the mint a a gentle press a couple of times with the muddler.
  • Add plenty of ice to the glass and top with soda water or ginger ale. Stir well.
  • Garnish with pomegranate seeds, mint and lime.

Notes

Note 1: if you're using the ginger ale, you won't need any additional sweetener. If using, I prefer monk fruit sweetener or Stevia.
Note 2: a traditional mojito is made with soda water, but this mocktail is lovely with ginger ale too. You could even use half ginger ale, half soda water if you wish.
