Raspberry Mocktail
This raspberry mocktail is made right in the glass so it's super easy and delicious too. A perfect non-alcoholic Christmas Drink.

- 8 raspberries
- 1 lime quartered
- 8 mint leaves
- sweetener of choice see Note 1
Place raspberries, lime, mint and sweetener (if using) into a glass.
Muddle together for about 1 minute to release the juice from the lime and raspberries, and the flavour from the mint. If you don’t have a muddler, the back of a wooden spoon or a soup spoon works well.
Top with sparkling water and stir gently.
Add ice and garnish.
Note 1: If your raspberries are sweet you may not need a sweetener. If using, you can choose your preferred sweetener, and add it to taste. I used ½ teaspoon Stevia, but there are plenty of other sweetener options. Other suggestions are honey, monk fruit sweetener or date syrup.
